  • Healthy Green Waffles / Gluten Free + Vegan

    The perfect allergy friendly snack, breakfast or dessert! These waffles are sweetened with fruit and they are gluten free, dairy free, egg free, vegan and contain no refined sugar.

    And to top it all off it's made in a blender or Nutribullet - no bowls + whisks needed.

  • Ingredients

    2 cups oats (use gluten free if necessary)


    1 cup oat/almond milk


    2 bananas (or 1 banana and 4 Tbsps applesauce if you want less of a banana taste)


    1 tsp cinnamon


    1 tsp vanilla extract


    1/4 tsp salt


    1 1/2 teaspoons baking powder


    2 Tbsp flaxseed powder (flax flour)


    1 Tbsp coconut sugar (optional)


    2 handfuls of baby spinach

Instructions

Preheat waffle iron and spray with cooking spray (I like the Coconut oil spray from the Checkers Simple Truth brand instead of conventional cooking sprays made with inflammatory oils)

Add the oats to a blender and blend until it forms a fine flour. Remove from blender.
Now add in the remaining ingredients and then the oat flour (wet ingredients first helps with blending). Blend all ingredients until smooth. Add a dash of water if it struggles to blend in a Nutribullet.

Pour about one ladle full of batter onto waffle iron.
Allow waffle to cook and leave a little longer for a crispier waffle (this bakes for longer than traditional waffles)

I love the heart shaped waffles. I cut them into hearts and freeze in a freezer friendly bag. Easy to take a couple out for lunchboxes and on-the-go snacks, they defrost perfectly!

Top with nut butter, fruit, honey or your favourite toppings!
