  • Beetroot Pancakes (Flapjacks) / Gluten Free + Vegan

    These pancakes (flapjacks) are such a hit with the kids. They are quick and easy to make. Toss all the ingredients in a Nutribullet (or any blender), blend and bake.

    They're free from dairy, gluten, eggs (vegan!) and contain no refined sugar. They're filling and nutritious. Perfect for breakfast, lunchboxes or as a snack.

  • Ingredients

    1 cup cooked beetroot (you can buy unmarinated cooked beetroot in packs from most supermarkets like Checkers, Woolworths and Food Lover's Market)

    1 very ripe banana

    2 flax eggs (2 Tbsp flaxseed flour + 6 Tbsp water, mix and let sit for 10min) (you can also use regular eggs - then the recipe might require more oats)

    1/2 cup coconut milk (or any milk)

    1 1/2 cups oats

    1 Tbsp raw honey (increase according to taste if necessary)

    1 tsp baking powder

    1/2 tsp vanilla extract

    1/2 tsp cinnamon

Instructions

Heat your pan and add a little bit of olive oil. Scoop tablespoons full onto the hot pan. Cook on a low heat to get a nice even colour without dark spots.
