Easy dinner for busy moms

A quick and easy dinner option for busy moms, this One-Pot Pasta Primavera combines pasta, mixed vegetables, and a creamy Parmesan sauce. Sautéed garlic and onions add flavor, while chicken or vegetable broth and heavy cream create a rich and satisfying sauce. Ready in just 30 minutes, this dish is both delicious and convenient, making it a perfect weeknight meal for a family of four.

Ingredients
500g pasta
2 cups mixed vegetables (e.g., bell peppers, cherry tomatoes, zucchini, broccoli)
2 cloves garlic, minced
1 onion, thinly sliced
2 cups chicken or vegetable broth
1 cup cream
1 cup grated Parmesan cheese
2 tablespoons olive oil
Salt and pepper to taste
Optional: red pepper flakes, fresh basil or parsley for garnish -
Instructions
Preparation:
Chop all the vegetables and set aside.
Grate the Parmesan cheese and set aside.
Mince the garlic and thinly slice the onion.
Cook Pasta:
In a large pot, bring salted water to a boil.
Add the pasta and cook according to package instructions until al dente.
Drain the pasta and set aside.
Sauté Vegetables:
In the same pot, heat the olive oil over medium heat.
Add the minced garlic and sliced onion. Sauté for 2-3 minutes until fragrant.
Add the mixed vegetables to the pot and sauté for another 5-7 minutes until they start to soften.
Combine Pasta and Vegetables:
Return the cooked pasta to the pot with the sautéed vegetables.
Pour in the chicken or vegetable broth and heavy cream.
Stir well to combine all ingredients.
Simmer and Thicken:
Bring the mixture to a simmer and let it cook for another 5-7 minutes, stirring occasionally.
The sauce should start to thicken slightly.
Add Cheese and Seasoning:
Stir in the grated Parmesan cheese until it's melted and well combined.
Season with salt, pepper, and optional red pepper flakes to taste.
Serve:
Once the sauce has reached your desired consistency, remove the pot from heat.
Garnish with fresh basil or parsley if desired.
Serve hot and enjoy your quick and easy One-Pot Pasta Primavera!
