  • Raspberry Chia Pudding | Dairy Free, Vegan, No Refined Sugar

    This is a beautiful pink pudding to make for kids, guests or yourself! Easily prepped ahead of time (and really quick to make). You can adjust the sweetness level according to taste. It's free from dairy, gluten and refined sugar, plus it's vegan!

  • Ingredients

    1 cup coconut milk

    1/2 cup frozen or fresh raspberries

    2 tsp maple syrup (or more! adjust to taste, some raspberries can be more sour than sweet)

    1/2 tsp vanilla extract

    3 Tbsp chia seeds

Instructions

Add milk, raspberries, maple syrup and vanilla to a blender and blend until smooth and combined.

Add raspberry milk to a glass jar or bowl (with lid) and stir in chia seeds. Let sit for 5 minutes then stir the mixture again to get out any clumps that may have formed. Place in the fridge to set, at least 1 hour but up to 12 hours.

When ready to serve, top with more berries, toasted almonds or your preferred toppings.
