  • Healthier Pampoenkoekies / Pumpkin Pancakes

    These pancakes taste just like "pampoenkoekies" if you serve them with honey. They are quick and easy to make. Toss all the ingredients in a nutribullet (or any blender), blend and bake.

    They're free from dairy, gluten, eggs (vegan!) and sugar. They're filling and nutritious. I bake a big batch and freeze them, they defrost perfectly. Great for school lunchboxes or breakfast.

  • Ingredients

    1 cup cooked pumpkin

    1 very ripe banana

    2 flax eggs (2 Tbspns flax flour + 6 Tbspns water, mix and let sit for 10min) (you can also use regular eggs)

    1/2 cup oat milk (or any milk)

    1 1/2 cups quick oats

    1 Tbspn raw honey (increase according to taste if necessary)

    1 tspn baking powder

    1/2 tspn vanilla extract

    1/2 tspn cinnamon

Instructions

Heat your pan and add a small amount of olive oil. Scoop out tablespoons full. Cook on a low heat to get a nice even colour without dark spots.

Ps. If you let the mix sit for a while, it thickens, so just add more milk or water and blend again. If on the other hand your mixture is too runny (this can happen if the pumpkin retains a lot of water while cooking), just add more oats and blend again.
