  • Green Spinach Flapjacks (Pancakes) | Gluten, dairy, sugar free (vegan option)

    These flapjacks/pancakes are quick and easy to make. Toss all the ingredients in a blender, blend and bake. 

    They are free from dairy, wheat/gluten and sugar. They're filling and nutritious. This recipe can also be made egg free (vegan).

  • Ingredients

    2 ripe bananas

    2 eggs (or Flax Eggs - 2 Tbsp Flaxseed powder mixed with 6 Tbsp water, mix and let sit for 10min to thicken)

    1/2 cup dairy free milk (or any milk)

    1 1/2 cups quick oats (gluten free if necessary)

    1 tsp baking powder

    1 tsp vanilla extract

    1/2 tsp cinnamon

    2 handfuls of baby spinach

Instructions

Add all ingredients to a high-speed blender and blend.

Heat pan, add olive oil.

Cook on a lower heat to get a nice even colour without dark spots.

Ps. If you let the mix sit for a while, it thickens, so just add more milk/water and blend again. Alternatively, if your mixture is too runny, just add more oats and blend again.
